Mutton Ghee Roast
Ingredients
Mutton 1kg
Ghee 6 tbsp
Ammikal Masala 4 tbsp (60g)
Jaggery 1 tsp (chopped)
Method
- In a pressure cooker on medium heat add 2 tbsp ghee.
- Add the mutton pieces and fry for 4-5 minutes.
- Add ammikal masala and half a cup of water, mix well, close the lid and cook for 4-5 whistles (or till mutton is cooked). Let the pressure drop naturally in the cooker.
- In a separate pan heat 4 tbsp ghee and add the cooked mutton.
- Fry on medium-low heat for 10-15 stirring occasionally.
- Add a quarter cup of water and jaggery. Mix well.
- Cook till it reduces to a thick gravy consistency.
- Serve with neer dosa, rice or parotta.
